We are right in the ripening phase of the grapes! The berries are getting bigger as the days go by due to the exceptional weather since the beginning of August.
During the ripening period of the grapes, the berries are loaded with mineral elements and phenolic compounds (tannins and coloring and aromatic materials) and, above all, with sugars.
This increase in the concentration of sugars is accompanied by a decrease in that of acids. Sign that it is almost time to harvest! We very regularly check the maturity and the date of the harvest will be set very soon. We’ll keep you posted !
