After 4 intense weeks, the harvest is over.
We harvested all of our plots of white grape varieties the last week of August. Indeed, we harvested Grenache Gris, Grenache Blanc, Macabeu and Vermentino.
Since the beginning of September, we have been harvesting our red grape varieties: Grenache Noir, Mourvèdre, Carignan and finally Syrah, which together are preparing to reveal an aromatic and quality vintage.
The entire harvest is now in the cellar. The vinification work is not yet finished. We collaborate with our cellar master Jérôme who oversees the winemaking process. Indeed, he controls the extraction of the juice, the filtrations, the follow-up of the macerations, the temperature control, the aging in vats or in barrels and the rigorous follow-up of each wine until their bottling.
The first certified organic wine will be bottled at the end of the year !
