Grape variety: 80% Grenache Blanc and 20% Macabeu
Terroir: Cuvée from our best vines in the foothills of the Corbières on red clay-limestone and limestone soils.
Vinification: Manual harvesting, direct pressing. Mutage stops the action of the yeasts before they have been able to transform all the sugar into alcohol. This is how the Rivesaltes retain some of the natural sweetness contained in the fruit. The undergrowth aging is done in 60 hectoliter casks. They will continue a slow maturation that lasts several years.
Tasting: Its dress is old gold and shiny. On the nose flavors of honey and orange zest. On the palate, gingerbread dominates then gives way to dried fruits (nuts and roasted notes). The finish is velvet.
Food pairing: To be enjoyed on its own or with a concentrated dark chocolate dessert. Serve at 12°C
