The Château de Jau vineyard is located on the first foothills of the Corbières in the Agly valley. Indeed, it extends over a hundred hectares, themselves surrounded by 500 hectares of scrubland in the middle of unspoiled wild landscapes of striking beauty. In addition, we have the privilege of being alone on this bank of the Agly, which is a big asset for organic farming : in conversion to organic farming since 2018, the vineyard will be able to claim the organic label for the harvest. 2021. Château de Jau enjoys ideal conditions combined with an exceptional terroir to produce high quality wines.
To produce the estate’s vinegar, we have selected a natural sweet wine made from Muscat de Rivesaltes aged for several years in an oxidative environment, which consists of half filling old oak barrels to promote contact between the wine and oxygen. air. Bacteria will grow, produce acetic acid, and form a surface haze. We thus obtain a rare vinegar, both elegant and aromatic.
It is then made in pretty craft boxes and comes with a spout to make it easier to use.
Due to its skilfully preserved and exploited characteristics, and its unique taste, it can therefore perfectly accompany salads but also serve as a deglazing for meat, fish or vegetables.
For sale, we exclusively offer the vinegar packaged in a 375 mL bottle. Degree : 6.8°
