THE ORIGIN
In 1977, Mrs. Giscard d'Estaing, then first lady of France, visited the vineyards of Roussillon flanked by a group of eighty young farmers. She asked to stop at a vineyard to have a meal. The prefect at the time was a friend of Bernard Dauré and he naturally thought of Jau. Bernard was enthusiastic and flattered by the idea of receiving such prestigious guests; he told his wife Sabine about the project. She was much less excited: receiving a delegation of one hundred people is no small matter and could quickly turn into a fiasco. She did, however, have the the idea of phoning Michel Guérard, the famous starred restaurateur, to ask his advice.
He asked her about the habits of the farm workers during their 9 o'clock break in the vineyard. "They grill sausage and lamb chops with the shoots of our vines, rub tomatoes on bread with a little oil and garlic to accompany the ham and enjoy a little muscatel wine with Roquefort cheese" she retorted. “Don't look any further," exclaimed the great chef. "Do the same thing.” A few days later, a joyful party took place in the shade of the mulberry tree at the edge of the great basin.
This is how the Jau grill and its unchanging menu were born!
THE ATMOSPHERE
Jau is a unique place. You can have lunch in the shade of a majestic and venerable three-hundred-year-old mulberry tree that diffuses a cool shade while filtering the light of Roussillon. It is a place where simplicity reigns: the furniture and tableware blend with the schist of the walls and the nearby vineyards.
There is a feeling of peace, perhaps due to the presence of its large pond populated with carp. It is a joy for children, as well as the big fire of vine shoots for the barbecue. It is a superb corner of nature where one remains a long time at table all together while tasting the good wines of the domain.
