Just before bottling the wine, Jérôme, our Cellar Master, carries out a filtration which aims to eliminate the deposit (particles from the grapes) which gives the wine its cloudy appearance.

The cellar master is responsible for the care to be given to the wines and spirits stored in a cellar or cellar. In collaboration with the oenologist, he supervises all the operations which lead to the elaboration of the wine. As such, he is a fermentation professional. And, he is also a master in tasting.

The art is to find the right compromise between the elimination of unwanted particles and the conservation of macromolecules which contribute to the structure of the wine, such as tannins, polyphenols…
